I'm Erin Allmann. I love family, friends and food. A lot. I live in a teeny, tiny apartment in a place called Paradise with a wonderful boyfriend named Brett who cooks much better than I do. We both happen to be fantastic at eating and whenever we're not doing so, (which isn't all that often), we try to stay occupied outdoors. We're also two of the biggest nerds you can ever find, so excuse the occasional o-chem, bio, Harry Potter, or Star Wars reference.


We eat a lot of pizza here in our little house. Sometimes we buy it from the place down the street that makes pizzas so big they put costco’s to shame. But most of the time we make it. Why? because in the time it takes to heat up your oven you can have ooey gooey cheesy saucy goodness dribbling down your face hot and fresh and made with whatever you want to eat. Or in our case, whatever we happen to have in the fridge at the mo’.







And a lot of times, we don’t have any sauce. I started making pasta sauce instead of buying it, because did you know that’s the easiest thing ever?? And a giant can of tomatoes costs waaay less than a moderately-sized jar of pre-sauced tomatoes. Anyways. I make sauce. But you have to cook it and it takes some time. Not work, just time. And sometimes you don’t want to wait to make sauce for your pizza. And sometimes your impatience will lead you to this: a 10 second pizza sauce that tastes oh-my-gaaahhhhdd so good. Seriously.

 

So this sauce was borne of impatience. Like most deliciously easy things often are, no? I just threw together what we had that sounded like it belonged in a sauce, blended, and voila! A no-cook sauce that cooks while your pizza does for something wonderfully tomato-y garlicky and just plain yummy. I do suggest you try it on your next pizza. You sure will be glad you did.

10-second pizza sauce

Ingredients

1 large tomato, cut in chunks
1 clove garlic, cut in half
1/4 small onion (we had red on hand but you could use whatever kind you have), cut in chunks
some handfuls of basil
Procedure

Throw everything in your blender and blend, baby, blend. That’s it! You can leave it chunky or blend till smooth, it’s up to you and how you like your sauce. Turn your oven all the way up to hot-as-it-can-handle with either a pizza stone or upside down cast-iron skillet inside, roll your dough out super thin, slather some sauce on it and scatter on the cheese, switch the oven to broil (yeah, that’s right, broil), throw your pizza onto your stone (or upside down skillet) and in four minutes you’ll be burning your mouth and you won’t be sad about it.
I learnt this recipe from my mate and mentor Gennaro Contaldo. It's a brilliant, basic tomato sauce for using on pizza and it's also great with pasta or to serve alongside meat or fish – quick, fresh, fragrant and sweet.

Place a large non-stick frying pan on the heat and pour in 4 generous lugs of olive oil. Add the garlic, shake the pan around a bit and, once the garlic begins to colour lightly, add the basil and the tomatoes. Using the back of a wooden spoon, mush and squash the tomatoes as much as you can. 

Season the sauce with salt and pepper. As soon as it comes to the boil, remove the pan from the heat. Strain the sauce through a coarse sieve into a bowl, using your wooden spoon to push any larger bits of tomato through. Discard the basil and garlic that will be left in the sieve, but make sure you scrape any of the tomatoey goodness off the back of the sieve into the bowl. 

Pour the sauce back into the pan, bring to the boil, then turn the heat down and simmer for 5 minutes to concentrate the flavours. It will be ready when it's the perfect consistency for spreading on your pizza. 

Store the sauce in a clean jar in the fridge – it'll keep for a week or so. Also great to freeze in batches or even in an ice cube tray, so you can defrost exactly the amount you need. But to be honest, it's so quick to make, you might as well make it on the day you need it.
