Homemade Pizza is THE BEST!

My family LOVES pizza, especially homemade pizza.  Of course regular homemade pizza recipes aren’t all the difficult – some sauce, toppings, cheese.  I’ve written about whether pizza is healthy or not before plus I’ve tried gluten free pizza recipes.  But, truthfully, after a while, I just don’t know what to do with homemade pizza that will jazz it up.

Then, I was given the opportunity to create recipes for Nut Fusions Peanut Butter, but they only wanted savory recipes.  So, homemade pizza recipes seemed like a great idea and Thai Pizza was born.  I have subsequently tried this pizza recipes a couple times with regular peanut butter and it was good but needed about 1/8 teaspoon ground ginger and 1/4 teaspoon red pepper flakes to make it better.

One other quick tip – if you don’t have coconut aminos (although I highly recommend getting some) or tamari (which is properly prepared soy sauce) you can use regular soy sauce.  But, when you run out of your current bottle, please make a healthier choice and switch to either coconut aminos or tamari.  I know it’s a little more expensive up front, but seriously, how often do you purchase soy sauce anyway?  Pick a healthier option.  You can learn more about soy and health here.

Pizza – Your Way

My family fell in love with this homemade pizza even though it didn’t have any red sauce!  It was a unique and different pizza but still with a bit of comfort food feel.  You can make your own homemade pizza crust or use a premade crust.  Many bakeries are not offering extraordinary homemade pizza crusts for sale.  I’d recommend avoiding the pizza crust tubes, boxes, etc. as I haven’t found one that is very healthy.  The final product, shown in the picture, was a premade crust so that’s what the pizza recipes below indicate. . . you just never know which pizza recipes will turn out for picture taking!  So, I guess what I really learned was to just be adventurous – anything is pretty good on a pizza crust!

Thai Pizza

Ingredients:

Pizza dough
8 oz. skinless boneless chicken
1 Tbsp coconut oil
2 tsp ginger, minced
1 tsp garlic, minced
1/4 cup Nut Fusions Thai Won Ahn Peanut Butter
3 Tbsp hot water
2 tsp coconut aminos or tamari
2 tsp rice vinegar
1 tsp extra virgin olive oil
1 red pepper, chopped
4 scallions, chopped
½ cup mozzarella cheese, grated
¼ cup Parmesan cheese, grated


Directions:

Bake dough following directions or at 450 degrees on bottom rack for 6-8 minutes.
Cube chicken breasts and cook in coconut oil until no longer pink.
Mince garlic and ginger. Allow to rest 5-10 minutes.
Blend ginger, garlic, Nut Fusions Thai Won Ahn Peanut Butter, water, aminos, vinegar and oil until smooth.
Combine 1 Tbsp mixture with cubed chicken, red pepper and scallions.  Mix until well coated.
Spread crust with remaining peanut butter. Top with chicken mixture.  Top with cheeses.
Bake another 9-11 minutes until golden brown.A few weeks ago I posted on my instagram that after three years of homemade pizza Fridays, I made a pizza that Philip claimed was as good as a pizza parlor. Being a pizza lover and a big time foodie, as well as a tough grader, this is seriously high praise. One of the best days of my life, as you can imagine.



So, after three years of trial and error, time to share my recipe.

Oh, but first things first. To make great pizza, you really need a pizza stone. I've made plenty of pizzas without a stone and they're good, but amazing pizza is born right on that stone. Get one.

Pizza Dough
makes one 12" pizza. double for a thicker crust or larger pizza

1/2 cup hot water (110-115 degrees)
1/2 Tbsp yeast
1/2 tsp salt
1 cup flour (I often do 1/2 white, 1/2 wheat, which is delicious, but full white flour makes the very best crust, in my opinion)

Combine water and yeast and wait five minutes while the yeast activates. Add salt and flour and mix until a soft dough forms. Knead in the mixer (or by hand) for five minutes, then cover and let rise for 20-30 minutes. In all honesty, I don't always let it rise more than five minutes...it's still great. Just a little lighter, fluffier, and crispier (on the bottom and crusts) if you let it rise the full 30 minutes.

Pizza Sauce
slightly adapted from mels kitchen cafe. Makes enough for 4-5 12" pizzas.

1 (14.5 ounce) can diced tomatoes
1 small can tomato paste
1 teaspoon sugar
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon minced garlic
1/4 tsp salt
1/4 teaspoon red pepper flakes

Combine all ingredients in food processor or blender and blend until desired consistency. Store in the fridge in an airtight container.

Heat your oven to 500 degrees (with the pizza stone on the lowest oven rack, or second to lowest if your lowest is super close to the bottom burner).

On a pizza paddle, or on the back of a cookie sheet, sprinkle some cornmeal, and then spread your pizza dough out on top of it.  Top with pizza sauce and your desired toppings. We typically do mozzarella cheese, pepperoni, green peppers, mushrooms, jalapeƱos and fresh basil. Then we top it off with some freshly grated parmesan cheese.



Carefully slide the pizza off the paddle or cookie sheet and on to the stone. Cook for 10-12 minutes (Philip likes the crusts pretty crispy so we go the full 12 mins). Let it cool for about a minute, then cut and serveI think there are very few who can vouch and say that they DON'T like Pizza! Its not the healthiest thing to be munching around all the time, but then on occasion when you enjoy it, nothing competes the heartiness and deliciousness of a yummy pizza! I have had my share of pizzas and am at a stage when I can look at a Pizza and not go Ga-ga over it. There is no more salivating or uncontrollable drooling over a dominoes pizza crust. But sometimes on those rare occasions that it does - I need to devour a pizza right then and there. I cannot wait for those 45-60 minutes for the pizza man to arrive!  So, I make my own. I love thin crust, but there is something about that stuffed crust pizza that has my heart racing! Its not as hard as you might think - in fact it is ridiculously simple to make your own stuffed pizza crust.

Few ready made ingredients from the local store can make it possible for you to prepare one right in the comfort of your home and in less that those dratted 60 minutes of the delivery time! (of course, if you have a pizza place right nearby, then this argument does not hold for you!) . Another reason why I like to make my own pizza is having control over the ingredients and cheese I put into it. I go crazy over various toppings and if that was not enough, when I asked my wonderful Facebook readers for topping ideas - I got galore of them!!! I feel like making pizzas just to enjoy all those yummy topping! But since I hadn't gone shopping, I had very few ingredients on hand. So I used a simple topping of fresh tomatoes, basil, healthy arugula leaves and cheese (of course!). It was immensely aromatic and fresh. The arugula leaves not only added nutrition to the pizza but also color. The basil and tomato combination is a winner, as always! And, do I even need to talk about what a sprinkling of fresh mozzarella could do to a Pizza (not to talk about that stuffed cheesy crust)? In a word - heaven! You can use any topping of your own.
